Upgrade your classic grilled cheese with sweet, spicy and tangy twist. These mango Chutney toasties are next level delicious, and come together in just under 15 minutes.

Growing up, sandwiches have always been my lunch box staple. Those thinly sliced onions, cucumbers and boiled potatoes stacked between bread slathered with a bright green cilantro mint chutney have always been my favorite!

As I grew up, I started experimenting and trying different sauces and mix-ins- everything from a nice green chili Thecha to a cooling desiccated coconut Chutney. This time, I wanted to try something unique- a bit sweet and spicy, and these seemed like the perfect idea.

What's So Great About the Recipe?

  • It's so, so easy to make. It took me literally 10 minutes to assemble all the sandwiches, and a few minutes to grill them.
  • They're really versatile and customizable. I love experimenting with different jams (like my spicy tomato jam) and spreads (like my sweet pepper relish).

Mango chutney: Use your favorite store-bought chutney or spare a few minutes to scratch make my ginger mango chutney, which is perfect for this recipe.

Butter: I used melted salted butter here. You can use unsalted butter if you want to keep it low in sodium.

Cheese: Cheese slices work best! Feel free to use almost any kind of cheese you like- I used Cheddar.

Bread: Sliced sandwich bread is perfect to use. You can also use Focaccia or Italian sub if you want to.

Substitutions & Variations

  • You can use almost any kind of bread you like! Brioche bread is great too, as it has that moist and soft texture that works perfectly well with this grilled cheese.
  • For a bit of extra heat, use an infused butter like jalapeno butter or hot honey butter instead of just salted butter.

How to Make Mango Chutney Toasties

Step 1: Brush melted butter on one side of each of the bread slices.

Step 2: Spoon some of the mango chutney over the slice.

💭Top Tip

Tips & Tricks to Nail the Recipe

  • To make the toasties spicy, sometimes I like to add a dash of my homemade jalapeno flakes too.
  • You can also switch things up and use a different spread or condiment like my cashew basil Pesto or guava paste to try different flavor variations.
  • I used a grill toaster to make these mango chutney toasties, but you can also just use a cast iron skillet if you don't have it. Make sure you cover the skillet too, to get the cheese to melt.
  • Some grilled cheese recipes call for the use of mayo instead of butter. Since mayo is essentially oil, it gets the bread to brown up nicely and doesn't end up burning as quickly as butter does- so if that's your thing, go ahead and do it.
  • You can also bulk up the sandwiches by adding a meat of your choice. Salami and turkey ham are great choices, but I'm partial to my homemade chicken deli meat.

How to Serve Mango Chutney Toasties

Enjoy these mango Chutney toasties on their own as a snack or a quick on-the-go lunch. If I'm making these when I'm entertaining, I go the extra mile and drizzle a bit of my habanero hot honey or jalapeno honey over them before serving.

I also love featuring them on my snack platter along with some Cretan Dakos, my favorite fried stuffed olives and Air Fryer lemon pepper chicken legs.
