Making homemade seasonings and condiments is my passion, and over the last few months, I have been trying out quite a few homemade versions of my favorite packaged seasoning mixes- everything from the classic chaat masala seasoning and Japanese rice seasoning to my all-time-favorite mixed herb seasoning.

This time, I wanted to try something that I could use for my favorite bowl of Ramen, and this ramen seasoning seemed like a great idea.

What's So Great About the Recipe?

  • It's so easy to make. It barely takes any time to make, and is an excellent no-cook recipe.
  • It's really versatile- just like my homemade lemon pepper seasoning. You can sprinkle it over your favorite fried foods or even use it to season your stir fried vegetables.

Chicken stock cubes: The base! Feel free to use the brand of your choice.

Garlic granules: For that savory kick and a bit of texture. You can use garlic powder too, if that's what you prefer.

Brown sugar: Just a bit, to balance out the other flavors with that hint of sweetness. Sometimes, I use my homemade date sugar instead of brown sugar.

Powdered spices: I used some onion powder, ground cumin and my homemade Air Fryer ginger powder.

Parsley: For the color and freshness.

Substitutions & Variations

  • To make a vegetarian version of the recipe, you can swap the chicken cubes with vegetable stock cubes. Also try my homemade vegetable bouillon cubes if you end up making soups often.
  • For a kick of heat, you can add a pinch of cayenne or some dried jalapeno flakes into the mix too.
  • Don't have brown sugar? Use coconut sugar instead.

Tips & Tricks to Nail the Recipe

  • Sometimes, I like to add dehydrated vegetables (like my Air Fryer dehydrated bell peppers) into the mix too. They are perfect in a Ramen seasoning and get that nice bit of texture as they absorb moisture from the broth.
  • If your chicken bouillon feels a bit cakey, you can pulse it in a food processor or blender jar along with the other seasonings to make a uniform spice mix.
  • Taste and adjust seasoning if needed. Sometimes, I like to add a bit of my homemade citrus salt, garlic parsley salt or jalapeno salt too.
  • Make sure you store the seasoning in a clean, dry glass jar and keep it away from moisture. I realized this when I made my homemade Creole seasoning and it clumped together.

How to Use Ramen Seasoning

Sprinkle some of the seasoning into your bowl of Ramen right before you serve, or add it into the mix while cooking the noodles. I usually use my corn stock or low sodium vegetable broth as a base, and top it with some of my chicken floss.

I like my Ramen a bit spicy, so I usually finish up with a drizzle of my habanero oil or Sichuan chili oil before serving. If you prefer a milder flavor, you can quickly whip up a 3 ingredient scallion ginger oil or homemade chili garlic oil while the noodles get cooked- it's perfect for spooning over the Ramen.
