I love using it as a topping over my hot dogs and tacos every time I run out of my quick pickled red cabbage.

Recently, I've been trying to make a lot of pickled foods, sides and toppings from scratch. My TikTok spicy pickled garlic and pickled shredded carrots have been huge hits, and I also made a nice fermented beet sauerkraut to use for my sandwiches and wraps.
This time, I wanted to try something more substantial- something I could quickly make when I was entertaining, and a Coleslaw seemed like a great idea.

What's So Great About the Recipe?
This coleslaw barely takes 15 minutes to make, and is incredibly versatile- just like my favorite sweet pepper relish. Plus, you can play around with the mix-ins and seasonings to your liking, and fine-tune it to suit your taste buds too.
Recipe Ingredients


Veggies: I used a mix of carrot, red and white cabbage, red onion and some green bell peppers.
Apple cider vinegar: For that fruity, tangy flavor. You can also stick to white vinegar if you don't have this at hand.
Mustard: I used whole grain mustard here to get that bit of texture. Feel free to use yellow mustard if that's what you have.
Honey: To sweeten and balance the vinaigrette.
Celery seeds: For that incredible aroma. You can skip this if you don't have it at hand, or just use some homemade celery salt for that flavor.
Seasonings: Just some salt and pepper. You can use red pepper flakes if you want a bit of heat.
Oil: Use the best quality extra virgin olive oil you can find. I like using my citrus infused olive oil sometimes to get that extra tanginess.

Substitutions & Variations
- For extra flavor, swap the regular honey with an infused honey like my homemade jalapeno honey or habanero hot honey.

How to Make Sweet Vinegar Coleslaw

Step 1: In a bowl, combine oil, apple cider vinegar, honey, carom seeds, mustard and seasonings.

Step 2: Whisk together to create a uniform dressing.

Step 3: In a large mixing bowl, add the veggies and pour the dressing over the top.

Step 4: Mix well and let it sit for a few minutes before serving.

For those perfect thinly cut veggies, use a mandolin slicer or a sharp knife.

How to Store Leftover Sweet Vinegar Coleslaw
Store your leftover Coleslaw in the refrigerator for up to a day- not longer, as the veggies can start to lose water and become soggy.
If you want to make this ahead of time, prepare the dressing and the sliced veggies and store them separately for up to 5 days in the refrigerator. You can then combine them when you want to have them- simple!

You absolutely can! I love using fresh veggies because I find that they stay crunchy for much longer, but it's totally okay to start with pre-shredded veggies too.
You can add red, yellow and orange bell peppers into the mix and even thinly sliced kale if you want to. If you love spicy food, you can also add sliced jalapenos!
