Sweet Vinegar Coleslaw

Ingredients
  

  • 2 cup white cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrot julienned
  • 1 cup red onion sliced
  • 1 cup green bell pepper thinly sliced
  • 1 tablespoon whole grain mustard
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • ½ teaspoon celery seeds
  • ¼ teaspoon black pepper powder
  • ½ teaspoon salt

Instructions
 

  • In a bowl, combine oil, apple cider vinegar, honey, carom seeds, mustard and seasonings.
  • Whisk together to create a uniform dressing.
  • In a large mixing bowl, add the veggies and pour the dressing over the top.
  • Mix well and let it sit for a few minutes before serving.

Notes

  • Don't be worried if the veggies seem like too much. They will wilt slightly and shrink as they sit in the dressing, and you'll have just the perfect amount.
  • For a kick of heat, swap the apple cider vinegar with some hot pepper vinegar, or use a fruity strawberry vinegar if you want more of that tart, sweet flavor.
  • Whisk the dressing well before you pour it over the veggies. The idea is to let the oil and the vinegar emulsify together.
  • For extra zesty and lemony flavor, add some homemade lemon pepper seasoning into the mix!
