In a bowl, combine oil, apple cider vinegar, honey, carom seeds, mustard and seasonings.
Whisk together to create a uniform dressing.
In a large mixing bowl, add the veggies and pour the dressing over the top.
Mix well and let it sit for a few minutes before serving.
Notes
Don't be worried if the veggies seem like too much. They will wilt slightly and shrink as they sit in the dressing, and you'll have just the perfect amount.
For a kick of heat, swap the apple cider vinegar with some hot pepper vinegar, or use a fruity strawberry vinegar if you want more of that tart, sweet flavor.
Whisk the dressing well before you pour it over the veggies. The idea is to let the oil and the vinegar emulsify together.
