These marinated butter beans, packed with bright, Mediterranean flavors, are a lifesaver during the hot summer months, when the last thing you want to do is cook.

10 minutes is all it takes to achieve the perfect sweet, spicy and tangy flavors in this delightful light lunch that doubles up as an appetizer when teamed up with some crostini- just like my marinated tomatoes!

I'm a big fan of no-cook sides and appetizers, and since I host so often, I try and experiment with different recipes every chance I get.

I recently tried my hands at Cretan Dakos, which was such a crowd pleaser, and my roasted zucchini dip has always been a hit every time I make it. This time, I wanted to try my hands at something more wholesome, and this recipe seemed like the perfect idea.

  • It's ridiculously easy to make- just like my marinated artichokes and marinated carrots.
  • It's perfect as a light lunch or an appetizer, teamed up with some bread to scoop up all the yumminess.

Recipe Ingredients

Butter beans: These are also known as Lima beans, and have the perfect size and shape soak up all that beautiful marinade.

Honey: For that delicate sweetness. I love using my habanero hot honey or jalapeno honey sometimes, for a spicy kick.

Garlic: For that savory depth. Use air fried roasted garlic for a smoky aroma.

Green onions: For freshness and a bit of texture. You can use sliced red onion too.

Lemon juice: For that citrusy zing.

Seasonings: I used red pepper flakes, Sumac, and a bit of salt and pepper.

Oil: Extra virgin olive oil works best.

Parsley: To garnish. I use my Air Fryer dried parsley when I run out of fresh parsley.

Substitutions & Variations

  • Use a seasoned salt like homemade herb salt or garlic parsley salt to add extra flavor to the marinade.
  • To lend a nice briny flavor, you can add chopped capers or olives.
  • Sundried tomatoes can also be a fantastic addition! I love using my homemade oven dried tomatoes whenever I have them at hand.

How to Make Marinated Butter Beans

Step 1: Combine oil, honey, lemon juice, chopped garlic and seasonings in a jar.

Tips & Tricks to Nail the Recipe

  • If you're making these marinated butter beans as a light lunch, you can also add some roasted sweet peppers to bulk it up.
  • You can also try the exact recipe using a different kind of bean for a bit of variation. Chickpeas and lentils are great choices.
  • Sometimes, I like to switch things up and skip the lemon juice, and use a splash of vinegar instead for that tanginess. I'm partial to my hot pepper vinegar, but you can just stick to regular vinegar or a fruit infused vinegar like strawberry vinegar or blueberry vinegar if you're in the mood to experiment.
  • For some extra yumminess, top the marinated butter beans with a generous amount of crumbled feta right before serving.
  • You can use either canned or dried beans here. I used canned ones to make it quick, but you can also start with dried beans if you want to. Soak them overnight first and then cook them until they're tender but still hold their shape.
