Ingredients
  

  • 1 can butter beans drained
  • 1-2 garlic
  • 1 green onion
  • 1 lemon juiced
  • 1 teaspoon honey
  • ¼ teaspoon Sumac
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 tablespoon parsley
  • teaspoon salt
  • teaspoon pepper

Instructions
 

  • Combine oil, honey, lemon juice, chopped garlic and seasonings in a jar.
  • Add chopped green onions and mix again.
  • Transfer rinsed and drained butter beans to a bowl. Add chopped parsley.
  • Pour the marinade over the beans.
  • Mix well and enjoy.

Notes

  • You can use either canned or dried beans here. I used canned ones to make it quick, but you can also start with dried beans if you want to. Soak them overnight first and then cook them until they're tender but still hold their shape.
  • You can also try the exact recipe using a different kind of bean for a bit of variation. Chickpeas and lentils are great choices.
  • For the best flavor, refrigerate the beans for an hour before serving.
  • For some extra yumminess, top the marinated butter beans with a generous amount of crumbled feta right before serving.
