What's So Great About the Recipe?
I recently made a batch of oven dried tomatoes and wanted to try making a nice versatile condiment that I could pair with all my favorite foods.
My sundried tomato dressing was a big hit, but I really wanted to try something more substantial- something to go beyond a drizzle for a salad bowl.
And that’s when I experimented with this recipe.
The combination of tomato and garlic made this sun-dried tomato aioli a riot of flavors, to say the least.
Ingredients For the Sun Dried Tomato Aioli
The simplest version of this aioli calls for the use of just 5 ingredients, excluding the seasonings.
Mayonnaise: You’ll need a good amount of mayonnaise for this recipe. It essentially forms the base for the aioli.
Lemon juice: Lemon juice adds that nice acidity and brightness to the tomato aioli, and also helps balance out the richness and creaminess from the mayo and the oil.
Sun dried tomatoes: You’ll also need a good amount of oil-packed sun dried tomatoes. This is what lends some incredible sweet and tangy flavors into the sauce.
Garlic: And of course, you can’t forget the intense, pungent flavors that garlic brings into this aioli.
Basil: Fresh basil leaves lend a beautiful sweetness and a touch of freshness to this savory aioli.
Seasonings: I kept the seasonings simple and just used some salt and pepper.

How to Make Sun Dried Tomato Aioli
Ready to try out this easy recipe? Here’s how to do it right.
In a food processor or a blender, combine all the ingredients and blend for a few seconds until you get a sort of a paste that’s creamy and uniform in color.
Pour into a small dip bowl and serve, or store for later.
Substitutions & Variations
- To make a vegetarian version of the sun-dried tomato aioli, you can use vegetarian mayo instead of the regular mayonnaise.
- To bring some more flavor to the aioli sauce, you can also use flavored mayonnaise. Just remember to taste and adjust the seasonings you’re adding, since flavored mayonnaise typically already has quite a bit of seasoning added in.
- If you don’t have lemon juice, you can use a dash of vinegar to add some tanginess.
How Can I Make Roasted Garlic Aioli?
You can also bring a variation to this easy classic recipe by first wrapping the garlic cloves in some foil with a pinch of salt and then baking them until the cloves soften.
You can then add these to the aioli mixture before you blend it all together- and it’ll make your aioli more garlicky and flavorful.
Equipment
How to Store Sun Dried Tomato Aioli
You’ll need to store this savory tomato and garlic aioli in the refrigerator in a clean glass container or an airtight container.
The aioli should stay fresh for 3-4 days, or even up to a week if you make sure you store it properly.
Tips & Tricks to Nail the Recipe
- If you want your sun-dried tomato aioli to have a milder flavor, reduce the amount of tomatoes you’re adding in.
- To add a kick of heat to the aioli, you can also add a dash of cayenne pepper into the mix.
- If you’re not using sun dried tomatoes packed in oil, you’ll need to add some extra olive oil into the mix while making aioli.
- I would also recommend soaking the sun-dried tomatoes in a small bowl with some warm water for a few minutes before you use them to make the aioli.
How to Serve the Sun Dried Tomato Aioli
You can enjoy this sun dried tomato aioli in tons of different ways. Here are some good ideas for your inspiration.
In Sandwiches
Thanks to the rich, spreadable consistency, this garlic and tomato aioli can act as a great spread for sandwiches and burgers.
You can easily use it as a swap for your regular tomato sauce or ketchup, and personally, I think it’ll be great in a nice chicken sandwich.
As a Sauce
This aioli comes together super quick, which means you can easily use it as a dipping sauce for any of your fried foods.
You can also make it thinner by adding some more oil and mayonnaise into it and blending it again, until you get a steady stream of the ‘sauce.’
Whether it is French fries or some chicken nuggets, I love serving a variety of dips and sauces, and I think this would be an amazing condiment choice.
