I'm absolutely fascinated by Italian flavors, and how such simple, everyday ingredients, when used correctly, can transform into such BIG and impressive flavors. And that's why I tried my hands at Parmesan croutons and Italian crispy breadcrumbs last weekend.

- You'll need just a few pantry staples to put it together- just like with my olive oil pizza sauce.
- It's incredibly versatile. You can serve it as a dip, use it as a spread or even as a dressing- like I sometimes do when I make my marinated tomatoes.
Recipe Ingredients

- Parmesan cheese: Good quality Parmesan cheese.
- Garlic + scallions: The aromatics. These build flavor and add that savory depth to the salsa.
- Seasonings: I kept it simple and just used some red pepper flakes, salt, pepper and my homemade mixed herb seasoning.
- Olive oil: The best quality extra virgin olive oil you can find. I like using my lemon olive oil sometimes to lend a bit of citrusy flavor as well.

Substitutions & Variations
- Use an infused salt like Italian herb salt, lemon infused salt or some spicy jalapeno infused salt to bring different flavors to the Parmesan salsa.
- Don't have scallions? Use a different fresh herb of your choice. Parsley, basil and chives are great choices.
How to Make Salsa di Parmigiano

Step 1: Chop the scallion greens finely using a sharp knife.

Step 2: Chop the Parmesan cheese into cubes and blitz in a food processor until coarse.

Step 3: Transfer to a bowl and add the seasonings, chopped garlic and scallions.

Step 4: Pour in the olive oil and mix.

To make things quicker, you can add the garlic cloves and scallions directly into the food processor along with the cheese.

Tips & Tricks to Nail the Recipe
- Want the salsa to have a smoother consistency? Pour the olive oil into the food processor along with the cheese. This will create a kind of emulsion which will make the salsa less chunky.
- To bring a bit of flavor variation, you can use a mix of Parmesan and Asiago cheese.
- You can also add thyme or use my rosemary garlic infused oil instead of regular olive oil to lend a beautiful herby undertone to the salsa.
How to Serve Salsa di Parmigiano
Use Salsa di Parmigiano as a spread over some crostini and top with lots of cherry tomato confit or Italian roasted bell peppers to make a delicious appetizer that you can serve at any party you're hosting.
I also love using it as a simple pasta sauce- I usually toss my cooked homemade cheese tortellini in it along with a spoonful of the pasta cooking water to make an easy and delicious pasta dish.

Troubleshooting and FAQs
Store the leftover salsa di Parmigiano in an airtight container in the refrigerator for up to 3 days. I wouldn't recommend storing it beyond that as it has raw garlic.
