Ingredients
  

  • 200 g Parmesan cheese
  • ½ cup extra virgin olive oil
  • 3-4 garlic
  • 1 teaspoon mixed herb seasoning
  • 1 teaspoon red pepper flakes
  • 1 scallion
  • teaspoon salt
  • teaspoon pepper

Instructions
 

  • Chop the scallion greens finely using a sharp knife.
  • Chop the Parmesan cheese into cubes and blitz in a food processor until coarse.
  • Transfer to a bowl and add the seasonings, chopped garlic and scallions.
  • Pour in the olive oil and mix.

Notes

  • To make things quicker, you can add the garlic cloves and scallions directly into the food processor along with the cheese.
  • Want the salsa to have a smoother consistency? Pour the olive oil into the food processor along with the cheese. This will create a kind of emulsion which will make the salsa less chunky.
  • To bring a bit of flavor variation, you can use a mix of Parmesan and Asiago cheese.
