Chop the scallion greens finely using a sharp knife.
Chop the Parmesan cheese into cubes and blitz in a food processor until coarse.
Transfer to a bowl and add the seasonings, chopped garlic and scallions.
Pour in the olive oil and mix.

To make things quicker, you can add the garlic cloves and scallions directly into the food processor along with the cheese.
Want the salsa to have a smoother consistency? Pour the olive oil into the food processor along with the cheese. This will create a kind of emulsion which will make the salsa less chunky.
