This chipotle aioli packs in the heat from chipotle peppers and the tang from the lime come together in an ultra creamy base. 

Serve it as a dipping sauce with your French fries or slather it on your burgers to take them to the next level.

If you haven’t guessed that already, I’m all about experimenting and adding uniqueness to classic foods, especially condiments. 

My sundried tomato aioli and black pepper aioli were both amazing, and that kind of inspired me to try out another version- one that packs in a nice kick of heat too. 

And that’s when I thought about harnessing the heat from Adobo peppers.

It has such a beautiful balance of creaminess, richness and heat, and you can tweak and play around with it too - depending on your personal taste preference. 

Plus, the recipe is super easy and delicious!

Ready to make this homemade chipotle aioli? Here’s all you’ll need.

Chipotle peppers: To get that perfect kick of heat, you’ll need to use chipotle peppers in adobo sauce. 

Lime juice & zest: For that little zesty flavor, you’ll also need a bit of lime juice and zest. 

Garlic: To add some beautiful pungent flavor, I used fresh minced garlic. About a clove or two should be just fine.  

Mayonnaise: I used regular mayonnaise for this recipe, but if you want to, you could also try using vegan mayo. 

Honey: To balance out the heat and pungent flavors, I also added some honey. This one’s optional though. 

Seasonings: To season, I just used some salt and pepper.

In a food processor or blender jar, combine the chipotle chiles in adobo sauce, mayonnaise, garlic, seasonings, lemon juice and honey.

Substitutions & Variations

  • If you don’t have the lime juice that the recipe calls for, you can use lemon juice instead. 
  • Don’t have the chipotles in adobo sauce? Just use some chipotle powder instead. Chipotle sauce can also be a great alternative. 
  • If you’re using vegan mayo and want to bring in some sweetness into this spicy chipotle aioli, you can use maple syrup or agave instead of the honey.

💭Top Tip

Remember that the mixture should come to a rolling boil- it should keep boiling even when you're stirring it. This will ensure that the peppers cook well, and the jelly reaches the right consistency.

How to Store Chipotle Aioli

The best way to store your homemade aioli is to transfer it to a glass jar or an airtight container and refrigerate it. It can stay fresh for up to a week in the refrigerator. 

Tips & Tricks to Nail the Recipe

  • To keep this healthy, you can also make your own homemade mayonnaise and use it for the recipe. 
  • If you’re making the mayo from scratch, you might want to use pasteurized eggs as that is what is recommended by the FDA when using raw egg. 
  • I would recommend using extra virgin olive oil or avocado oil to make your homemade mayo
  • Remember to taste and adjust the aioli as you keep going. The idea is to find the right balance between the garlic and chipotle peppers that works for you. 
  • You can also add a pinch of smoked paprika to bring a bit of smoky flavor to the aioli. 
  • Another great idea is to add half a teaspoon of onion powder into the creamy chipotle aioli to mellow down its flavors. 
  • If you’re using chipotle chili powder, you may want to start with just a little of it at a time, and then gradually add more if needed. 
  • You can also make a simple version of this recipe by using just 5 ingredients - a clove of garlic, some mayo, a teaspoon of chipotle peppers, salt and lemon juice.  

How to Use the Spicy Chipotle Aioli

With its creamy, spicy flavor, this chipotle aioli sauce can be used with pretty much anything. It is so much better than the store bought sauces and condiments you usually buy. 

I find it perfect for dipping my sweet potato fries, nachos and also for slathering on my sandwiches and burgers.
