In a food processor or blender jar, combine the chipotle chiles in adobo sauce, mayonnaise, garlic, seasonings, lemon juice and honey.
Process until aioli forms a smooth texture.
Notes
The best way to store your homemade aioli is to transfer it to a glass jar or an airtight container and refrigerate it. It can stay fresh for up to a week in the refrigerator. To keep this healthy, you can also make your own homemade mayonnaise and use it for the recipe. If you’re making the mayo from scratch, you might want to use pasteurized eggs as that is what is recommended by the FDA when using raw egg. I would recommend using extra virgin olive oil or avocado oil to make your homemade mayo. Remember to taste and adjust the aioli as you keep going. The idea is to find the right balance between the garlic and chipotle peppers that works for you.
