Tangy, spicy, and super delicious, this apricot salsa packs in the deliciousness of some of the season's finest ingredients. If you love salsas and dipping sauces, you've got to give this recipe a try.
It's a great fun twist to your classic tomato salsa and is also an amazing way to use up some of that fresh fruit.

Recently, I've been trying a lot of dips and sauces. My cowboy butter dipping sauce is fantastic when paired with meats, and my Thai dipping sauce has been a hit with dumplings and other Asian appetizers.
Inspired by them, I really wanted to experiment with something more versatile- a dip for some chips if you may. And what could be better than a nice salsa?

The simplicity of this recipe has my heart! It's a no-cook recipe with just some simple ingredients and comes together in just minutes. I'm definitely going to make these for a house party that I'm hosting next.
And of course, the apricots, lime, jalapenos, and cilantro all come together to make one healthy dip that packs in lots of nutrients.
Ingredients for the Apricot Salsa Recipe

Ripe Apricots: Use fresh and ripe apricots for the best flavor and texture.
Jalapeños: For that kick of heat. Use as much as your taste buds can tolerate.
Cilantro: For that beautiful freshness and pop of color.
Lime Juice: To lend the salsa that delicious tanginess, and to tie all the flavors together.
Garlic: For that bit of pungent deliciousness. Use fresh minced garlic for best results.
Red Onion: To lend a bit of crunch and some extra flavor and body to the salsa.
Brown Sugar: To tone down everything with just a teeny bit of sweetness. Use white sugar if you don't have brown sugar.
Salt and pepper: To season!

Substitutions & Variations
- Give this fresh apricot salsa a unique twist by teaming it up with another fresh fruit of your choice. Mangoes and pineapples are great here, but of course, you can always stick to the classic tomato too!
- Add some fresh Mint leaves to lend the salsa a refreshing twist.
- Swap the lime juice in the recipe for lemon juice if you want a milder citrusy flavor.
How to Make Apricot Salsa

Step 1: In a large bowl, combine the diced apricots, chopped jalapeño, minced garlic, red onion and sugar.

Step 2: Chop the cilantro and add it to the salsa. Squeeze some lime juice too.

Step 3: Season with salt and freshly cracked black pepper

Step 4: Gently mix all the ingredients until they are well combined
💭Top Tip
The key to a delicious apricot salsa is using ripe apricots. They should be sweet and juicy, but not too soft or mushy.

How to Store Leftover Apricot Salsa
If you have any leftovers, move them to a clean glass container and refrigerate them immediately.
The salsa should stay good for up to 5 days, but I would highly recommend finishing it up within 3-4 days.
Tips & Tricks to Nail the Recipe
- For this recipe, you'll need to peel the apricots before you chop them up. To do this easily, first blanch them in boiling water for about 30 seconds, then transfer them to an ice water bath. This should make the skins should come off easily.
- Once peeled, remove the core and dice the apricots into small, even pieces. Smaller pieces equal better texture, but of course, you can make the chunks larger if you want the salsa to have a bit of a bite.
- I would recommend letting the salsa chill for a few minutes in the refrigerator before you serve. This will help all the flavors develop nicely.
- To bring a different flavor into the mix, use fresh orange juice instead of lime juice.
- For natural sweetness, swap the brown sugar with some honey.
How to Serve Apricot Salsa
The sweetness of the apricot in this salsa makes it a great teammate to lots of savory dishes, adding lending that nice burst of flavor and freshness. Of course, you can always serve this sweet and spicy salsa with a bag of tortilla chips or nachos.
My favorite way to enjoy this salsa is to spoon it over my tacos. It's either this or my garlic habanero hot sauce. This fruity salsa also works wonderfully with grilled chicken, shrimp, or fish when served as a side.

Recipe FAQs
I wouldn't recommend using dried apricots, as they lack the juiciness and fruitiness you'll need in the salsa.
The salsa packs in jalapenos which can make it spicy. To tone it down, de-seed the jalapenos before you chop them up.
