I have to admit- I’m mildly fascinated by freeze-dried fruit.
The idea of actually getting to enjoy the original flavor of fresh fruit in such a beautiful dehydrated form is something I never expected.
I recently tried my hands at quite a few sweet condiments including my date puree and whipped honey, and with holiday season just around the corner, I thought of combining strawberries and sugar into a concoction that is shelf stable and versatile.
And that’s when I landed this recipe.

You’ll need just 2 simple ingredients to make this homemade strawberry sugar.
Freeze dried strawberries: You’ll need freeze-dried strawberries, which have absolutely no moisture.
Sugar: I used granulated sugar for this recipe, but you could totally use regular sugar too.

Substitutions & Variations
- To enhance the flavor of the strawberry sugar, you can also add a small bit of dried vanilla beans or vanilla extract powder into the mix. Another great idea is to start off with vanilla sugar for this recipe.
- You can also team up other freeze dried berries of your choice along with the strawberries, and make a mixed berry flavored sugar. Blueberries and raspberries are great options.
How to Make Strawberry Sugar
This homemade strawberry sugar recipe is super easy. To make this recipe, simply follow the step-by-step instructions.
In a coffee grinder or food processor, combine the freeze dried strawberries and sugar.
Process under the strawberries are finely ground.
Transfer the fine powder to a clean bowl or container, free of moisture.
Use it to sweeten your favorite foods or simply sprinkle over fresh fruit.

Remember that unlike the packaged strawberry sugar that you’ll find at your local grocery stores, this one doesn’t have preservatives and anti-caking agents, so it might clump a bit, especially if it is stored for months.
How to Store Strawberry Sugar
You can batch make your strawberry sugar, transfer to an airtight container and store it in a cool and dark place for up to 6 months.
You don’t need to refrigerate it- it stays perfectly fine at room temperature in your pantry.
Remember to use a clean and dry spoon to use it, and then put the lid back on the container to keep the sugar away from moisture.
Tips & Tricks to Nail the Recipe
- Make sure you use freeze dried strawberries and not dried or dehydrated strawberries, as they still have a bit of moisture.
- If you don’t want to use your food processor, you can simply pulverize the strawberries in a Ziploc bag using a rolling pin until they’re finely powdered, and then add in the sugar.
- You can also try making peach sugar or blueberry sugar by adding and experimenting with other freeze dried fruits of your choice.
- Make sure that you don’t end up overgrinding the strawberry powder and the sugar, or the heat from the food processor can start to break down the sugar.
- Also keep in mind that the food processor needs to be completely dry before you add the sugar and freeze dried fruit in.
- Avoid using powdered sugar to make this recipe, and even if you do, don’t add it into the food processor. Simply process and grind the strawberries, get it out into a bowl and then mix in the sugar as per your taste preference.
How to Use Strawberry Sugar
The best, simplest way to use strawberry sugar is to add it to your baked goods like quick breads, muffins and cakes.
I personally love using the sugar as a topping over my pancakes, waffles and French toast.
I think it would also add some beautiful flavor of fresh strawberries to a classic vanilla oatmeal or any other cereal for that matter.
