Air Fryer Avocado Egg Rolls
Hot, crispy, juicy and delicious, these Air Fryer avocado egg rolls are going to be your next favorite appetizer!
They take a little over 30 minutes to make and are freezer friendly too- perfect for batch-making over the weekend. Team up this wicked Cheesecake Factory copycat with my epic cashew tamarind sauce and you've got yourself a crowd pleaser.

Ever since I tried making buffalo chicken wings in the Air Fryer, I've been obsessed with trying out fun and interesting recipes using the Air Fryer. I love how it manages to crisp up pretty much anything so effortlessly, and with barely any oil.
I recently tried making Air Fryer lemon pepper chicken legs for a house party I was hosting and everyone absolutely loved them. So of course, I had to try another appetizer too.

What's So Great About the Recipe?

Recipe Ingredients

Veggies: You'll need ripe avocados for the base, a red onion for that bit of texture, and some sundried tomatoes (or my oven dried tomatoes) for a bit of savory deliciousness.
Egg roll wrappers: The best ones you can get.
Garlic powder: To season. You can chop up some fresh garlic or use some roasted garlic for a smoky flavor.
Lime: Freshly squeezed lime juice, for that zing!
Cilantro: For added freshness.
Oil: Just a little- to brush over the avocado egg rolls while they're getting air fried.

Substitutions & Variations
- If you don't have sundried tomatoes, you can chop up a fresh tomato and use it instead. Just make sure you use a tomato that's ripe, but not too juicy- you don't want the filling to get watery.
- Don't like cilantro? Skip adding it and use fresh basil instead. Even better- just use mixed herb seasoning to season the avocado mixture.
- You can also use an infused salt like jalapeno salt or citrus infused salt to add extra flavor to the filling!
How to Make Air Fryer Avocado Egg Rolls

Step 1: Chop the sundried tomatoes and onion. Halve the avocadoes, pit and chop them as well.

Step 2: Transfer to a bowl and combine with chopped cilantro, seasonings and lime juice.

Step 3: Spoon the mixture onto the egg roll wrappers in a log nearly in the center.

Step 4: Fold the bottom over the mixture, and get the sides in the middle.

Step 5: Gently roll it and seal by moistening the open end with your fingertips.

Step 6: Transfer to a greased Air Fryer basket, brush with some cooking oil and air fry at 350 degrees for 8 to 10 minutes on each side.
💭Top Tip
Don't use too much of the filling- it'll be difficult to roll them and the wrappers may end up tearing too.

Tips & Tricks to Nail the Recipe
- Make sure you keep the egg roll wrappers covered in a moist kitchen towel at all times, especially when you're assembling them. This will keep them from drying out and breaking.
- You can experiment with different mix-ins too. I like adding some of my dehydrated bell peppers into the filling for an extra pop of color.
- You can chop the avocados (and other veggies) as finely or chunky as you like.
- For a spicy kick, chop up some fresh jalapenos (or use my homemade jalapeno flakes) and add them into the mixture as well. Sometimes, I also chop up some of my preserved chilies in oil and add them in.
- Keep in mind that since these avocado egg rolls are air fried, they won't have that golden brown color on the outside that deep fried egg rolls usually do. They'll still have that delicious crispy texture though.
- If you're deep frying them, make sure the oil is hot enough before you add them in, or they'll get soggy. Also fry a few at a time and don't overcrowd the pot.
How to Serve Air Fryer Avocado Egg Rolls
The best way to enjoy these crispy air fried avocado egg rolls is to pair them with a nice dipping sauce. I usually choose a creamy, cooling dip like cottage cheese ranch dip, my spicy jalapeno mayo or my charred scallion dip.
You can, of course, also team them up with something more spicy like jalapeno honey mustard or my favorite Carolina Gold BBQ sauce. I also think they'll taste great with a nice herby Chimichurri sauce- I can't wait to try pairing them with my Chimichurri aioli or Chimichurri Rojo.

Troubleshooting and FAQs
Store your leftover air fried avocado egg rolls in a clean, airtight container in the refrigerator for up to 3 days, and reheat them in the Air Fryer whenever you want to.
Yes, you can! Simply arrange them on a lined baking sheet, pop them in the freezer for an hour and then transfer them to a freezer-safe container or bag and freeze them for up to 3 months.
