Chop the sundried tomatoes and onion. Halve the avocadoes, pit and chop them as well.
Transfer to a bowl and combine with chopped cilantro, seasonings and lime juice.
Spoon the mixture onto the egg roll wrappers in a log nearly in the center.
Fold the bottom over the mixture, and get the sides in the middle.
Gently roll it and seal by moistening the open end with your fingertips.
Transfer to a greased Air Fryer basket, brush with some cooking oil and air fry at 350 degrees for 8 to 10 minutes on each side.
Notes
Don't use too much of the filling- it'll be difficult to roll them and the wrappers may end up tearing too.
Make sure you keep the egg roll wrappers covered in a moist kitchen towel at all times, especially when you're assembling them. This will keep them from drying out and breaking.
Keep in mind that since these avocado egg rolls are air fried, they won't have that golden brown color on the outside that deep fried egg rolls usually do. They'll still have that delicious crispy texture though.
If you're deep frying them, make sure the oil is hot enough before you add them in, or they'll get soggy. Also fry a few at a time and don't overcrowd the pot.
