These oven roasted strawberries are seriously delicious! Use them as a topping for ice cream or spoon it over your morning oatmeal bowl for that extra yumminess.

If you ended up buying more strawberries than you can use, this is a good way to put them to use! Reserve a few to make a batch of strawberry vinegar that you can use for your salad dressings and more!

It's the season of fresh berries here and I've really been enjoying it to the fullest, trying out new ways to use up all that fresh produce. I've tried out quite a few berry-forward recipes recently. My classic blueberry sauce was a total hit and all of us ended up using it for breakfast as a topping over our pancakes. I also used up a batch of raspberries to make a spicy raspberry salsa and it was SO good.

This time, I wanted to use fresh strawberries- and actually have them last longer than 2 days. And that's when I tried this recipe.

What's So Great About the Recipe?

  • If you have a batch of not-so-ripe berries that are more tart than sweet, this recipe is a good way to put them to use.
  • Roasting fresh fruit brings a beautiful caramelization and sweetness to it- I realized this when I made my fire roasted tomatoes.

Strawberries: I used fresh, ripe strawberries here. If you have ones that aren't bright red and look slightly yellowish, you can use them too!

Honey: Just a dash, for that extra sweetness. You can use date syrup or even regular white sugar if you want to.

Substitutions & Variations

  • For a deeper flavor, you can add a dash of vanilla extract to the roasted strawberries. Just drizzle a bit towards the end.
  • If you're vegan and don't want to use honey, you can use date sugar or date puree. This will lend a beautiful depth of flavor.

How to Make Roasted Strawberries

Step 1: Wash, pat dry and remove the tops of the strawberries. Slice them in halves.

Step 2: Arrange them on a lined baking sheet and drizzle honey over them. Season if you want to.

Step 3: Roast them in a preheated oven for 20 minutes. Remove and drizzle with more honey.

Step 4: Roast them again for 10 minutes if you want to get that bit of caramelization.

To bring out the fruity, sweet flavors of the strawberries, season with a bit of salt and pepper.

Tips & Tricks to Nail the Recipe

  • If you love that citrusy zing, you can add a bit of freshly grated lemon zest or orange zest into the mix. I usually end up using a bit of my lemon infused honey instead of regular honey and it does the job pretty well.
  • A drizzle of balsamic vinegar can also jazz up the flavors of the strawberries- I love doing that sometimes.
  • If you prefer that slight bit of caramelization, make sure you pat dry the strawberries well before you roast them, and spread them out well on your baking sheet.
  • If you like stewed, more syrupy strawberries, you can work with a lot of strawberries at a time, and even crowd up the baking sheet.

How to Serve Roasted Strawberries

Roasted strawberries have a beautiful sweetness and slight tartness that makes them perfect as a topping on parfaits, breakfast bowls, and more. I usually top them with some Feuilletine flakes too, whenever I have them at hand.

I love the idea of spooning them over my breakfast waffles, pancakes and French toast. You can also feature them on a breakfast platter with other condiments like some olive oil caramel sauce, a nice nutty pecan praline sauce, some fig compote or fig paste or my favorite pistachio pastry cream.

How do I store leftover roasted strawberries?

Roasted strawberries can stay good for up to a week in the refrigerator. Use a clean glass jar to store them.

Can I use frozen strawberries instead of fresh strawberries?

Of course, you can! You don't even need to thaw them- just use them as-is.
