Wash, pat dry and remove the tops of the strawberries. Slice them in halves.
Arrange them on a lined baking sheet and drizzle honey over them. Season if you want to.
Roast them in a preheated oven for 20 minutes. Remove and drizzle with more honey.
Roast them again for 10 minutes if you want to get that bit of caramelization.
Notes
To bring out the fruity, sweet flavors of the strawberries, season with a bit of salt and pepper.
A drizzle of balsamic vinegar can also jazz up the flavors of the strawberries.
If you prefer that slight bit of caramelization, make sure you pat dry the strawberries well before you roast them, and spread them out well on your baking sheet.
If you like stewed, more syrupy strawberries, you can work with a lot of strawberries at a time, and even crowd up the baking sheet.
