As the colder months of the year approach, I get out those warming spices and start experimenting. Recently, I made a big jar of lemon infused honey and turmeric ginger honey to use as an accompaniment or a breakfast spread.

This time, I thought of trying to make something that would make my everyday breakfast drink come together in a jiffy, and this instant Chai concoction seemed like the perfect idea.

What's So Great About the Recipe?

  • It's ridiculously easy to make. All you'll need is a few minutes in the kitchen to whip up a batch that can last for a week.
  • It's suitable for those with dietary restrictions too. You can team it up with both dairy and plant based milk (like my homemade almond milk)- it tastes amazing either way!

Tea bags: I used tea bags here to keep it simple and effortless. You can also use loose tea leaves if that's what you have at hand.

Whole spices: I used a mix of whole cloves, cinnamon, cardamom, star anise, black peppercorns and fresh ginger slices.

Brown sugar: For the sweetness. You can use white sugar too, but I prefer brown sugar for the depth. Sometimes, I also use my homemade date sugar.

See recipe card for quantities.

Substitutions & Variations

  • You can choose to skip the spices you don't have at hand, or if you prefer a milder version of the concentrate.
  • You can also skip the sugar and use any natural sweetener of your choice. Sometimes, I mix in some of my date syrup or orange spiced honey towards the end.
  • Whole fennel seeds, nutmeg and vanilla can also be excellent additions to consider adding if you have them at hand.

Tips & Tricks to Nail the Recipe

  • If this is the first time you're making a Chai concentrate or Chai tea latte, you may want to be careful with the quantity of spices you're using. Start with a little, taste, and add more if needed.
  • Don't have the whole spices that the recipe calls for? You can use powdered versions too. I use my Air Fryer dried ginger sometimes when I run out of fresh ginger too! Just make sure you add them in towards the end, and start with just a little, as powdered spices can be a lot more flavorful and intense.
  • If you have a few extra minutes, you can also lightly toast the whole spices in a hot pan for a minute or two, and then add them to the water. This will help release their aromatic oils and make the concentrate more flavorful.
  • Love the flavor of Chai? Add an extra tea bag into the mix. This will make the flavor of Chai stronger.
  • You can also add freshly grated orange zest to lend a brighter flavor to the Chai concentrate.

How to Use Homemade Chai Concentrate

The easiest way to use the homemade Chai concentrate is to team it up with some steaming hot milk and make a nice cup of Chai tea. You can start with a half and half proportion to begin with, or use more of the milk if you prefer a toned-down version.

This concentrate can also be used cold- to make a chilled iced Chai latte. Enjoy this with your favorite breakfast eggs, a simple bagel (I love my keto everything bagel) or even a nice egg in a bagel if you're in the mood for something hearty.
