Go beyond the classic cottage cheese ranch dip this time and try this salad to go with your favorite homemade pizza.

I really love simple salads that rely on a handful of pantry ingredients to create something surprisingly delicious, and this Swedish cabbage salad is exactly that. The cabbage stays wonderfully crisp while soaking up all the flavors from the tangy vinaigrette.
Cabbage is one of my favorite veggies to use- I've used it to make quick pickled red cabbage and also for a nice sweet vinegar coleslaw, but this time, I wanted to try something easy and effortless, and this one turned out perfect!

What's So Great About the Recipe?
- It's really easy to make, and comes together with just a few pantry staples- just like my marinated tomatoes.
- It's low in calories and great as a vegan side dish to pair with not just a pizza, but almost any other main.
- You can make it a day or two ahead of time too- just like my marinated butter beans.
Recipe Ingredients

Cabbage: Pick a white cabbage that has a tightly layered head.
Vinegar: Just some regular white vinegar. I love using my spicy pepper vinegar whenever I have it at hand, just for an extra spicy kick.
Sugar: To balance out the tanginess from the vinegar.
Seasonings: Some red pepper flakes, mixed herb seasoning (you can stick to using just oregano too), salt and pepper.
Oil: The best extra virgin olive oil you can find.
See recipe card for quantities.
Substitutions & Variations
- For a fun fruity flavor, use apple cider vinegar instead of regular vinegar.
- In addition to the cabbage, you can also thinly slice a single onion and add it to the mix.
- For extra freshness, chop up some fresh dill or parsley (or use my Air Fryer dried parsley) and add it to the pizza salad towards the end.
- You can also use an infused salt like herb infused salt or garlic parsley salt to season the salad- if you have them at hand.

Tips & Tricks to Nail the Recipe
- Allow the cabbage salad to rest for at least 10 minutes (ideally in the refrigerator) after you've drizzled it with the vinaigrette. This helps the flavors deepen further.
- Taste and adjust the seasonings and add more if needed.
- Toss the salad once again before you serve. This helps the vinaigrette redistribute throughout the salad. I always do this when I make my marinated artichokes.
How to Serve Swedish Pizza Salad
This Swedish pizza salad is the perfect side to go with a classic homemade pizza, but that's not just it. I love teaming it up with my Italian meatball sandwiches, grilled chicken, roasted meats and even with my favorite Italian chicken cutlets.
Whenever I'm hosting, I like to make my cheesy potato Aligot and some tomato Tartare as sides as well.
