Swedish Pizza Salad

This Swedish cabbage salad is crisp, tangy and lightly sweet with a flavorful herb vinaigrette. An easy make-ahead side dish that pairs perfectly with almost any meal!

Ingredients
  

  • 1 cabbage
  • 2 tablespoon vinegar
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon mixed herb seasoning
  • 1 tablespoon sugar
  • teaspoon salt
  • teaspoon pepper
  • 1 tablespoon oil

Instructions
 

  • Finely shred the cabbage and place it in a large mixing bowl.
  • Sprinkle the cabbage with the sugar and salt and toss well to combine.
  • Let the cabbage sit for 30 minutes to release excess moisture.
  • Meanwhile, whisk together the oil, vinegar, salt, mixed herb seasoning, red pepper flakes and black pepper in a small bowl.
  • Drain and discard the liquid that has collected at the bottom of the cabbage bowl.
  • Pour the vinaigrette over the cabbage.
  • Toss well until all the cabbage is evenly coated.
  • Serve immediately or refrigerate until ready to serve.
  • For the best flavor, refrigerate the salad for at least 30 minutes before serving.

Notes

  • Finely shredded cabbage gives the best texture.
  • This salad tastes even better after a few hours in the refrigerator.
  • Apple cider vinegar can be substituted for white vinegar.
  • Add carrots, onions or fresh herbs for extra flavor and color.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
