I've recently been experimenting with a lot of flavored salt recipes. My Sriracha salt and jalapeno salt have been huge hits every time I've used them as a final sprinkle on my favorite foods.
And recently, when I had some extra parsley at hand, I used it up to make some garlic parsley salt and oh my- it was amazing! That's when the idea of using herbs to make a herb-infused salt struck me, and I tried this recipe.

What's So Great About the Recipe?
Flavored salts are an excellent way to add a ton of flavor to your meals and foods with minimal effort. Just a sprinkle can jazz up pretty much anything and everything.
They're also so versatile and easy to make. All you'll need is a handful of ingredients to make a nice flavored salt from scratch. Plus, you can bring in a lot of variation to it too- based on what you have at hand, and what you like.
Recipe Ingredients
Sea salt: Kosher salt or sea salt is the best choice for this recipe. If you don't have either of these, feel free to use regular table salt.
Fresh herbs: I used a mix of rosemary, thyme, oregano and basil- I had all of them in my herb garden, so that really helped. You can use almost any herb you can get your hands on.
Garlic: Fresh garlic adds a beautiful depth of flavor to this infused salt. Though this one's optional, I highly recommend using it.

Substitutions & Variations
- Experiment with other herbs like dill, chives, sage, mint, celery, parsley and cilantro to create different flavor blends.
- If you don't have fresh garlic, garlic powder or granulated garlic can work well too.
- You can also add some grated lemon or lime zest to the mix to add an extra bit of flavor and a nice citrusy tang to the salt.
- To lend the salt a nice kick of heat, add some crushed red pepper flakes along with the herbs and the garlic.
How to Make Homemade Herb Salt
Wash and pat dry your herbs with a kitchen towel and remove all moisture.
Chop up some fresh garlic along with the herbs using a sharp knife.
Top with the coarse salt and continue chopping.
Crush the salt, garlic and herbs using the flat edge of your knife. Do this for 2-3 minutes to get all the herbs and garlic nice and smushy.
Spread this mixture on a baking sheet lined with parchment paper. Cover this up with a thin muslin cloth and let it dry overnight.
Store the finished salt in a glass jar or an airtight container and use whenever you want to.
How to Store Homemade Herb Salt
This homemade herb salt should stay fresh for up to 4 weeks when stored in an airtight container at room temperature. Remember to use a clean and dry spoon to portion it out- this will keep the salt from clumping.
If the salt has been dried (in the oven), it can stay fresh for months.
Tips & Tricks to Nail the Recipe
- I really wanted to try making a coarse salt this time, so I skipped blitzing it. If you want to keep it simple and stick to the classic smooth texture, you can process the salt in your food processor or blender jar until you get those perfect texture to sprinkle.
- If your mixed herb salt isn't drying even after a day, you can quicken up the process and pop the baking sheet into an oven preheated at its lowest setting, and let the salt dry up in there. This should take anywhere between 20-40 minutes, depending on how much moisture the salt has.
- I would recommend storing the salt for a couple of days before you use it. Doing this will allow the flavors to deepen, and you'll get a more powerful punch of flavor.
How to Use Herb Salt
There are a ton of ways to use this herbed salt. You can sprinkle it over your roasted potatoes or pan roasted veggies or even your favorite snacks like popcorn!
I love seasoning my mashed potatoes and breakfast eggs with it! It also makes for a great addition to your meat rubs and marinades, and tastes great when mixed into a homemade salad dressing or a vinaigrette. You can also mix it into some butter to make a herbed compound butter if you want!
Recipe FAQs
Adding herb stems into the mix can cause the herb salt to taste bitter. Make sure you're using only the herb leaves.
