Charred Scallion Dip
Rich, creamy, smoky and slightly spicy, this charred scallion dip is going to be your next favorite teammate to chips, French fries and all your favorite appetizers.
I recently tried making a simple roasted zucchini dip at a house party I was hosting, and everyone raved about it. This dip has similar flavors, and is perfect to make for BBQs, potlucks and summer cookouts!

I usually pick up a large bunch of scallions every time I go on a grocery run, and batch make some ginger scallion oil to spoon over my favorite Asian foods I make throughout the week.
Sometimes, when I have leftovers, I use them to make some Mexican grilled onions too- a wonderful side dish you just HAVE to try your hands at. The smoky, savory flavors of these grilled onions are actually what inspired me to try making this charred scallion dip.

Recipe Ingredients

Green onions: The hero ingredient! When charred, they lend a nice smoky sweetness to the dip.
Greek yogurt: For that rich, creamy base.
Mayonnaise: For that bit of sweetness and balanced flavor.
Garlic: For that depth of flavor. Fresh garlic is important here- garlic powder just doesn't work well.
Jalapenos: For that heat. Use as many as your taste buds can tolerate or add a sprinkle of jalapeno flakes for a subtle flavor.
Lemon: Freshly squeezed, to balance out the other flavors.
Seasonings: Just some salt and freshly cracked black pepper. I love using my citrus infused salt here for a bit of extra tanginess.

Substitutions & Variations
- For a heavier, more indulgent dip, swap the Greek yogurt in the recipe for softened cream cheese. I actually used sour cream sometime back since I had some leftover after making my lemon sour cream dip, and it turned out amazing.
- You can also skip the lemon juice in the recipe and use a dash of vinegar instead. Stick to the classics like white vinegar or apple cider vinegar, or just use an infused vinegar like my hot pepper vinegar for extra flavor.
How to Make Charred Scallion Dip

Step 1: Cut green onions into large chunks and grill in a pan with a dash of oil and sliced garlic.

Step 2: Cool and chop finely with a knife.

Step 3: Add to a cup along with the other ingredients.

Step 4: Whisk well to combine. Taste and adjust seasonings if necessary.

For some extra citrusy zing, you can zest the lemon and add it into the mix too!

- Depending on your personal preference, you can choose to grill the scallions in a pan over the stovetop, or in the oven. I just like doing it quickly in a pan.
- If you want the dip to have a more even, smoother consistency, you can pulse it in a food processor instead of chopping it up.
- You can use an infused salt like jalapeno salt or garlic parsley salt to add extra flavor to the dip.
- Instead of mayonnaise, you can use cottage cheese or feta cheese to keep it healthier- like I did when I made my lemon white bean dip.
