Cut green onions into large chunks and grill in a pan with a dash of oil and sliced garlic.
Cool and chop finely with a knife.
Add to a cup along with the other ingredients.
Whisk well to combine. Taste and adjust seasonings if necessary.
Notes
For some extra citrusy zing, you can zest the lemon and add it into the mix too!
Depending on your personal preference, you can choose to grill the scallions in a pan over the stovetop, or in the oven. I just like doing it quickly in a pan.
If you want the dip to have a more even, smoother consistency, you can pulse it in a food processor instead of chopping it up.
