Wondering how to sprout mung beans at home? It is actually surprisingly easy and requires nothing more than dried mung beans, water, and a little patience. In just a couple of days, you'll have fresh, crunchy sprouts that are perfect for salads, stir-fries, curries, soups, and sandwiches.

Not only is this economical, but you'll also get fresher sprouts without any preservatives. This was actually the goal behind me trying out this recipe and many others on my essentials list- including homemade coconut cream and scratch-made almond milk.

I love sprouting mung beans at home because it's almost completely hands-off. After soaking the beans overnight, nature does most of the work. All you have to do is keep the beans moist while they sprout.

Fresh homemade sprouts have a wonderful crisp texture and mild, nutty flavor that works in so many different recipes. I love adding them to my soups in specific- they have a slightly crunchy texture which is so great when I don't have my Air Fryer crispy noodles or Air Fryer tortilla strips handy.

  • Sprouting mung beans is really easy. You'll barely need any time and effort, and you can also meal prep and make a large batch of it to use for several meals throughout the week- like I do with homemade chicken floss.

Substitutions & Variations

  • In addition to the green mung beans, you can try the same method to sprout other lentils too. Chickpeas are a great option (especially to make a nice chickpea egg salad afterward)- just keep in mind that the sprouting time will change accordingly.
  • If you don't have a muslin cloth, a clean cheesecloth or thin cotton kitchen towel works well.
  • Leave the sprouts for an extra day if you prefer longer sprouts.

Step 1: Wash the mung beans nicely and soak them in water for 6-8 hours.

Step 2: Drain the water and transfer them to a glass jar. Cover with a muslin cloth and place the jar in a bowl, upside down, slightly tilted.

Step 3: Let it rest that way for 2-3 days, occasionally misting the jar with water to keep the sprouts from drying out.

Don't let the beans sit in standing water after soaking. Good drainage and proper airflow are the secrets to healthy, fresh sprouts.

  • Use fresh dried mung beans for the best sprouting results.
  • Make sure the beans are fully submerged while soaking. Keep the jar tilted so excess water can drain away.
