Ingredients
  

  • 2 cups mung beans

Instructions
 

  • Add the mung beans to a large bowl and cover completely with room-temperature water.
  • Soak overnight or for 7-8 hours.
  • Drain the water completely.
  • Transfer the beans to a clean glass jar.
  • Cover the jar with a muslin cloth and secure it with an elastic band or string.
  • Turn the jar upside down and place it in a large bowl at about a 45-degree angle.
  • Leave on the countertop for 1-2 days until sprouts appear.
  • If the beans begin to dry out, lightly sprinkle water over the muslin cloth.
  • Once sprouted, refrigerate until ready to use.

Notes

  • Fresh mung beans sprout more reliably than older beans.
  • Good drainage is essential to prevent the beans from spoiling.
  • Sprouting time may vary depending on the temperature of your kitchen.
  • Store finished sprouts in the refrigerator for up to 5 days.
