If you love caramel but want something naturally sweet, this date caramel sauce is about to become your new obsession.

It’s luxuriously thick, silky-smooth, and tastes like deep toffee and vanilla with a cozy whisper of cinnamon- all with just 4 ingredients and no need to turn on the stovetop. And if you still have some extra dates leftover, use them up to make your own homemade date sugar.

When it comes to making homemade condiments, dates have to be my favorite ingredient to use. You don't need to prep them at all, and they're perfect to use for recipes that require a bit of natural sweetness.

I've actually used dates to make my own homemade date syrup and date puree too, but this time, I wanted to try something different.

  • The sauce has that deep caramel-like flavor from dates, without any added refined sugar.
  • It's fast and foolproof- you don't need any thermometer, there's no need to simmer, and no risk of burning.
  • It's incredibly versatile! You can use it as a dessert sauce, breakfast topper, o even as a snack dip- just like my pecan praline sauce.

Recipe Ingredients

Dates: Use soft, plump Medjool dates for the richest 'caramel' taste. Other kinds of dates work too, but if they're dry or firm, you may need to soak them for a longer time.

Heavy cream: Full-fat cream for that classic caramel richness. If you want to keep it vegan, you can use my homemade coconut cream instead.

Vanilla: For that buttery-toffee flavor.

Cinnamon: Just a little, to balance out the sweetness with a bit of warmth.

Substitutions & Variations

  • Instead of heavy cream, you can use half-and-half to make a lighter sauce that’s more pourable and less thick.
  • In addition to cinnamon, you can also add a pinch of nutmeg to lend the sauce a bit of depth- like I did when I made my apple cider caramel sauce.

How to Make Date Caramel Sauce

Step 1: Soak dates in a bowl of hot water for 10-15 minutes to soften them.

Step 2: Remove and transfer them to a blender jar along with the remaining ingredients. Blend until you get a smooth paste.

💭Top Tip

Blend longer than you think you need to. Dates can look fully broken down while still leaving micro-grit that shows up on the tongue, so keep blending and tasting as you go.

Tips & Tricks to Nail the Recipe

  • Sometimes, I also like to add a pinch of my homemade orange zest to bring a bit of bright flavor to the sauce.
  • Reserve a few tablespoons of the date soaking water and blend in a splash at a time to loosen the sauce if it’s too thick.
  • Start blending on low, then increase speed, stop and scrape down the sides a couple of times and blend again for the smoothest finish.
  • If you want the date caramel sauce to be warm and more pourable, briefly warm the cream before blending it, or microwave the finished sauce for 10–15 seconds.
  • Use your leftover dates to make a batch of cream cheese stuffed dates or candied dates- they're both perfect appetizers!

How to Use Date Caramel Sauce

Spoon the sauce into a small jar or pitcher and serve it slightly warm for maximum drizzle-ability and aroma. For a pretty finish, sprinkle a tiny pinch of flaky salt or a dusting of cinnamon on top, then drizzle over ice cream, cheesecake, baked apples, or a stack of pancakes- like I do with my pistachio cream and classic blueberry sauce.

For a bit of textural fun, you can also team it up with some Feuilletine flakes or crispy coconut curds.

How long does date caramel sauce last in the fridge? 

When stored in a sealed jar or container, the date caramel sauce typically keeps well for about 7–10 days. It will thicken as it chills, so let it sit at room temperature for a few minutes or warm it briefly to get it to the right consistency.

My sauce is too thick. How do I fix it?

To adjust the consistency of the sauce, start by pouring in 1 tablespoon of reserved soaking water or a splash more cream, then blend again.
