Jalapeno Pickled Eggs

I've been trying a lot of pickled foods recently. My ginger carrot pickle and pickled turmeric have both been huge hits, and I've also tried making pickled cherries and pickled garlic to feature on my holiday charcuterie board.
This time, I wanted to try something more substantial- and pickled eggs seemed like a great idea.

What's So Great About the Recipe?
- It's super easy to make. All you need is a few minutes in the kitchen to whip up a nice batch of these pickled eggs that you can use for weeks.
- They're the perfect snack or side to sneak into your sandwiches. I end up alternating between these and my all-time favorite quick pickled red cabbage.
Recipe Ingredients

Jalapenos: Fresh jalapenos, for that bright green color and kick of heat. Use as many as you like.
Garlic: For that savory deliciousness. Raw garlic works best- I used it for my sweet pickled green beans recipe too.
Eggs: You'll need to hard boil eggs before you use them. Organic, free range eggs are best.
Apple cider vinegar: You can use white vinegar too, but I really like the crisp, fruity flavor of apple cider vinegar.
Whole spices: I used whole black peppercorns and some mustard seeds for a bit of heat and earthy flavor.
Turmeric: For that brilliant color. I used it for my curry pickled cauliflower recipe and absolutely loved it. Feel free to skip this if you don't have it at hand.
Brown sugar: To balance the tanginess from the vinegar with some sweetness.
Sea salt: For that salty kick.

Substitutions & Variations
- You can also experiment and try using other herbs and whole spices into these jalapeno pickled eggs. Dill seeds and carom seeds are great to try using- I used them for my quick pickled Brussels sprouts recipe too.
- If you love that extra heat, add a pinch of red pepper flakes as well. I used them while making my pickled raisins and it turned out to be such a delightful mix of sweet and spicy flavors.
How to Make Jalapeno Pickled Eggs

Step 1: Start by thinly slicing the garlic and jalapenos.

Step 2: Add to a pot along with black peppercorns, mustard seeds, turmeric, salt, sugar and apple cider vinegar. Bring it to a boil and take it off heat.

Step 3: Peel the hard boiled eggs and transfer to a clean glass jar.

Step 4: Pour the hot brine over the eggs.

Step 5: Add enough brine to almost entirely cover the eggs.

Step 6: Top with a lid and let it cool completely. Cover and refrigerate for 1-2 days before serving.

Make sure the brine comes to a rolling boil before you take it off heat.

Tips & Tricks to Nail the Recipe
- Just like most other pickled foods, the longer these sit in the refrigerator, the better they'll taste. I would recommend giving them at least a day to chill and for the eggs to soak up all those delicious flavors from the brine.
- If you want the jalapenos to have a bit of a crunch, you can skip adding them to the brine and just transfer them to the jar along with the hard boiled eggs. When you do this, they'll soften slightly but still stay green and crunchy.
- Sliced red onions can also be a fantastic addition to these jalapeno pickled eggs, and can add lots of savory deliciousness. I used them while making my lime pickled onions and the slight sweetness they added was absolutely fantastic!
- For a nice pop of color, you can also add a spoonful of red chili powder into the mix. I added some Cajun seasoning to make my Cajun pickled eggs and it was an absolute hit in my household.
How to Serve Jalapeno Pickled Eggs
There are a ton of ways to use these spicy jalapeno pickled eggs. You can slice them and add them to your sandwiches, turn them into deviled eggs or even make a potato salad or an egg salad using them.
I personally love serving them on a charcuterie board along with my fried stuffed olives, spicy tomato jam, a nice Bruschetta dip and lots of bread, crackers and veggie sticks.
And of course, you can also just enjoy them as-is as a quick snack.

Troubleshooting and FAQs
Yes, if the jar isn't clean or the brine isn't strong enough or hasn't been boiled enough, the pickled eggs can go bad.
If you notice any strange discoloration or an off-putting smell or odor as you open the jar, it's because the pickled eggs have gone bad.
I wouldn't recommend it. Since they aren't canned, it's best to refrigerate them at all times.
