This mango habanero salsa combines sweet mango with roasted tomato and habanero peppers for a smoky, sweet, and spicy salsa.

- 1 cup mango
- 1 tomato
- 1 habanero pepper
- 1 onion
- 1-2 garlic
- 1 cup cilantro
- 1 lime juiced
- Salt & pepper to taste
- ¼ teaspoon oil
Dice the tomato and onion and roughly chop the habanero peppers.
Arrange the tomato, habaneros, and onion on a baking sheet.
Roast for about 10 minutes until slightly charred.
Allow the roasted vegetables to cool.
Add them to a blender along with the garlic, cilantro, diced mango, salt, pepper, and lime juice.
Blend until slightly chunky.
Taste and adjust the seasoning if needed.
Serve immediately or refrigerate until ready to use.
- Adjust the number of habaneros according to your preferred spice level.
- For a smoother salsa, blend for a little longer.
- For a chunkier salsa, use short pulses and avoid over-blending.
- Store in an airtight container in the refrigerator for 3-4 days.
