Ingredients

  • 2 garlic
  • 1 cup cilantro
  • 2 jalapenos
  • 1.5 cup mayonnaise
  • 1 tablespoon lime juice
  • ¼ teaspoon crushed black pepper
  • Salt to taste

Instructions

  • Finely chop some fresh garlic, jalapenos and cilantro.
  • Add them to a bowl along with the mayonnaise.
  • Season with salt and pepper and add some lime juice and zest.
  • Mix and refrigerate for 30 minutes. Serve with your favorite foods.

Notes

  • If you don't like the chunky bits of jalapenos and garlic, you can just assemble everything in a mason jar with a wide mouth, and blend it together with an immersion blender until you get a smooth, bright green mayo.
  • To create a more rich and creamy dip, you can use a combination of equal amounts of mayonnaise and sour cream instead of just using mayonnaise.
  • If you have a few extra minutes and want to lend the mayo a slightly smoky flavor, you can first roast your jalapenos until they are slightly charred, remove the black bits as much as you can and then use them for the recipe.
  • You can also try using a mix of different kinds of peppers like Poblano peppers, Habaneros and Serrano's to create different flavored mayonnaise.
