Ingredients

  • cup sea salt
  • 2 bunch celery
  • 1 teaspoon carom seeds

Instructions

  • Wash and pat dry the celery. Chop up the stems into small chunks.
  • Arrange the celery leaves at the bottom of the Air Fryer basket in a single layer. Place the rack on the top.
  • Transfer the chopped stems to the tray.
  • Set your Air Fryer at the lowest temperature setting and air fry the celery for 3-8 minutes, until the leaves are dry.
  • Transfer them to a blender jar along with the carom seeds and salt.
  • Blitz for a minute until all the ingredients are well incorporated.

Notes

  • Keep checking on the celery occasionally as you air fry it. Since it is pretty fragile, it can end up burning pretty quick.
  • I used a 3:1 ratio of celery to salt to get that extra celery flavor. If you prefer a subtle flavor, adjust the ratio accordingly.
  • If you notice the salt clumping to the sides of the blender and spot traces of moisture, air fry the blended salt for a minute. To do this, simply transfer the salt to a piece of parchment paper and air fry it to remove the excess moisture.
  • To speed up the process of drying the celery, chop up the celery leaves roughly before you air fry them. I used this trick while making my Air Fryer dehydrated bell peppers and jalapeno flakes.
  • Make sure you arrange the celery leaves and stems in a single layer in the Air Fryer basket. Overcrowding the basket is a big no-no.
  • If you're storing it in a glass shaker jar like I did, you layer the bottom of the jar with some uncooked rice grains before you transfer the salt in. This will help absorb any moisture and will keep the salt nice and dry.
