Instructions
Start by soaking the dates in warm or hot water for at least 30 minutes.
Use a stick blender to blend them- along with the soaking water. Add more water if needed.
Once pureed, sieve the soaked date mixture through a muslin cloth and squeeze out all the liquid in a clean container.
Transfer this to a pan or a pot and let it cook over low heat until the mixture is bubbling and reduces to a slightly thick syrup consistency.
Allow it to cool down and then use it or store for later.
Notes
Make sure you clean and pit the dates before you use them for the recipe. Check for any worms or bugs.
Depending on the kind of dates you’re using, it can take anywhere between 30 minutes to 2 hours for the dates to soften.
Make sure you keep the heat medium-low while reducing the syrup, and keep stirring it to prevent burning.
