Ingredients

  • 2 cups dates

Instructions

  • Start by soaking the dates in warm or hot water for at least 30 minutes.
  • Use a stick blender to blend them- along with the soaking water. Add more water if needed.
  • Once pureed, sieve the soaked date mixture through a muslin cloth and squeeze out all the liquid in a clean container.
  • Transfer this to a pan or a pot and let it cook over low heat until the mixture is bubbling and reduces to a slightly thick syrup consistency.
  • Allow it to cool down and then use it or store for later.

Notes

  • Make sure you clean and pit the dates before you use them for the recipe. Check for any worms or bugs.
  • Depending on the kind of dates you’re using, it can take anywhere between 30 minutes to 2 hours for the dates to soften.
  • Make sure you keep the heat medium-low while reducing the syrup, and keep stirring it to prevent burning.
