- 2 cups cherry tomatoes halved
- 1 ½ cup cream cheese softened
- ½ cup Greek yogurt
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- 2-3 garlic
- 1 tablespoon basil chopped
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon black pepper
- Salt to taste
Chop cherry tomatoes into halves and transfer them to a bowl. Add minced garlic and season.
Add chopped basil and give it a quick mix.
Add olive oil and balsamic vinegar. Let this rest for a few minutes to soften the cherry tomatoes.
In a food processor, combine the cream cheese and Greek yogurt with a bit of lemon juice until you get a smooth mixture.
Transfer the mixture to a serving bowl. Top with the marinated cherry tomatoes.
Finish up with more seasonings and fresh basil. Serve with crispy toasted bread.
- Use room temperature cream cheese for best results. This will ensure you have a silky smooth, creamy dip.
- I used a food processor to make things quicker- but you don't have to. Simply whipping it with a whisk is okay too!
