Bruschetta Dip

Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 ½ cup cream cheese softened
  • ½ cup Greek yogurt
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 2-3 garlic
  • 1 tablespoon basil chopped
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon black pepper
  • Salt to taste

Instructions
 

  • Chop cherry tomatoes into halves and transfer them to a bowl. Add minced garlic and season.
  • Add chopped basil and give it a quick mix.
  • Add olive oil and balsamic vinegar. Let this rest for a few minutes to soften the cherry tomatoes.
  • In a food processor, combine the cream cheese and Greek yogurt with a bit of lemon juice until you get a smooth mixture.
  • Transfer the mixture to a serving bowl. Top with the marinated cherry tomatoes.
  • Finish up with more seasonings and fresh basil. Serve with crispy toasted bread.

Notes

  • Use room temperature cream cheese for best results. This will ensure you have a silky smooth, creamy dip.
  • I used a food processor to make things quicker- but you don't have to. Simply whipping it with a whisk is okay too!
