Crack open a whole coconut and remove the outer shell. Using a sharp paring knife, peel the brown outer layer.
Slice the coconut meat into thin chips.
Arrange on a baking sheet in a single layer without crowding them too much.
Bake in an oven at 275F for 15-20 minutes, shaking the chips around once or twice during the baking time.
Notes
Keep a close eye on the coconut while it's baking. Coconut can go from lightly golden to burnt surprisingly quickly, so start checking it around the 10-minute mark.
Slice the coconut as thinly and evenly as possible so the pieces bake at the same rate.
Arrange the slices in a single layer without overlapping to allow them to crisp up nicely.
