Spiced Christmas Jam

This easy spiced Christmas jam is sweet, tart and absolutely divine! Whip it up in under 20 minutes and store for weeks!

Ingredients
  

  • 1 cup cranberries
  • 1 cup strawberries
  • 1 orange juiced
  • 1 cinnamon
  • 1 nutmeg
  • 1 inch ginger
  • 1.5 cup brown sugar

Instructions
 

  • Add the berries and ginger to a food processor.
  • Blitz for a minute until they get chunky.
  • Transfer to a saucepan along with the orange juice, brown sugar and whole spices.
  • Cook on high for about 7 minutes, then turn down the heat and cook until the mixture reaches a jam-like consistency.

Notes

  • If you're worried about the texture of the jam, you can add an apple into the mix along with the berries. Apples have a high natural pectin content which will help the jam set.
  • Blitz the berries just a bit- until they're chunky. You don't need to blend them into a paste.
  • Remember that since this jam is made without pectin, it will not have that incredibly thick consistency- it will still be spreadable though. If you want it to be thicker, you can add some pectin into it during the final 2 minutes of cooking time.
  • Allow the jam to cool down completely before you transfer it to a container.
