Wash and dry the jalapenos. Slice them thinly and set them aside.
Transfer the sliced jalapenos in a small glass jar.
In a nonstick saucepan on medium heat, slightly warm the honey and then transfer it to the jar with the jalapenos.
Let it cool, put the lid on it and store in the fridge.

If you want your hot honey to be less spicy, you can reduce the amount of jalapenos you’re using, and even choose to remove the seeds and ribs before you add it into the honey.
If you want a clear honey, you can also choose to remove the peppers and strain it before you use it.
This infused honey has a long shelf life. Your jar of honey will last for up to 3 months if you store it in the fridge. However, I would recommend you use it within a month, just to be on the safe side.
Keep in mind that refrigerating the honey will cause it to crystallize, but that doesn’t make it inedible. You can easily fix the consistency by placing the jar of honey in a water bath or letting it come to room temperature and then using it.
If you want to make a vegan hot honey, you can use a plant based sweetener like agave or maple syrup.
