- 2 boneless skinless chicken breasts
- 1 lemon sliced
- 1-2 green onions
- 3-4 garlic cloves
- ½ teaspoon black peppercorns
- 1 bay leaf
- 1 teaspoon fresh thyme
- 3 cups water
Add the chicken breasts, lemon slices, green onions, garlic cloves, black peppercorns, bay leaf, and fresh thyme to a pot.
Pour in 3 cups of water.
Place the pot over medium heat and bring the water to a low simmer.
Once it reaches a low simmer, reduce the heat.
Gently poach the chicken for 10-15 minutes, or until cooked through and the thickest part reaches 165°F / 74°C.
Remove the chicken from the pot and let it rest briefly.
Slice and serve.
