Italian recipes and condiments are my newest obsession- my star spicy Italian dipping oil has everything to say about that. Recently, I got my hands on quite a lot of tomatoes, and I know how they're such a classic to use in Italian cooking, so I thought of using them up, and make my tomato tartare and some classic tomato passata and oven dried tomatoes to use for my pastas and pizzas.

And after all of that, I was still itching to try these smoky roasted tomatoes, but I still didn't want a big mess to clean up afterwards. And that's when I thought of putting my Air Fryer to use.

What's So Great About the Recipe?

Roasting these humble tomatoes actually adds a ton of extra flavor and deliciousness. It's what I noticed when I made my oven roasted Italian peppers, and I thought of replicating the recipe with some tomatoes too.

Plus, they're so easy to make- you'll just need 5 minutes of hands-on kitchen.

Tomatoes: Use the best ripe tomatoes you can get. If you can find Roma tomatoes- even better! I would recommend using tomatoes that have less water content.

Oil: Any cooking oil of your choice. Olive oil works best.

See recipe card for quantities.

Substitutions & Variations

  • To keep things minimal, I didn't use any seasoning. Depending on your personal preference, you can season the tomatoes too. Stick to the classic salt and pepper or choose an infused salt like jalapeno salt or Sriracha salt for a kick of heat or some herb infused salt or garlic parsley salt for some subtle Italian flavors.
  • Another great idea is to use an infused oil instead of plain olive oil to coat the tomatoes. I love using my garlic rosemary infused olive oil whenever I'm making these tomatoes for an Italian recipe, or my habanero oil for when I want to bring some spiciness and extra flavor.

Tips & Tricks to Nail the Recipe

  • If you can't find Roma tomatoes and just have watery tomatoes, chop them into half and remove their juicy center. Then, use the thick, fleshy portion for the recipe.
  • You can also replicate this recipe with cherry tomatoes if you want to, or try my cherry tomato garlic confit if you have a few extra minutes.
  • I used a sharp knife to chop up the tomatoes into chunky bits. Depending on what you're planning on using these tomatoes for, you can even blend them in a food processor.
  • I roasted whole tomatoes here, which is why it took them a longer time to get that char. You can choose to chop them up into medium chunks and keep their cut side facing upwards to make things quicker.
  • Make sure you don't stuff too many tomatoes in the Air Fryer basket- leave a little room for the tomatoes to get that char.
