Ingredients for Date Puree

16 ounces dates (pitted) - Use Mejdool dates for best results, as they pack a bigger punch, both in size and in taste. If you still want to use other variants, soak them first as they are usually drier than their Mejdool counterpart.

Instructions

Put the dates in a large bowl with HOT (or boiling) water, and soak them for 30 minutes.

Put the mixture in the food processor and process for 5-10 minutes, until it's smooth.

Keep letting it process until there are no visible pieces of skin and the color lightens to caramel.
